Awesome Slow Cooker Pot Roast

Here's another "throw it all in the crock pot and forget about it" recipe.  Fall is always a busy time of year with the kids back in school and all the other activities that follow.  The more easy and delicious recipes I can find, the better! 

Ingredients (printable recipe)
2 (10.75 ounce) cans condensed cream of mushroom soup
1 (1 ounce) package dry onion soup mix
1 1/4 cup water or beef broth (beef broth adds more flavor--low sodium is best)
about a 4 lbs beef roast (I used a bottom eye of round roast)
Directions
Mix the soups and water OR beef broth together in the slow cooker and put the roast on top. Spoon some of the soup mixture on top of the roast to coat it.  
Cook on High setting for 3 to 4 hours, or on Low setting for 8 to 9 hours.

Here's what I used.  I used beef broth instead of water and I used a 4 lb bottom eye of round roast.
I mixed the soups and beef broth together in the slow cooker and put the roast on top.  I spooned some of the sauce on top and let it cook on low for about 5 hours.  I needed it to cook a little faster.  So, I turned it up to high for about another 2 hours.

The Results...
Was Awesome Slow Cooker Pot Roast truly awesome?  My family thought it was!  Everyone enjoyed this roast and we decided we would give it 4.5 stars.  It was very easy to prepare and my husband even pitched in and made the potatoes!  The only thing I would do differently is cook this on low for a longer period of time.  I rushed the cooking time a little and we thought the meat could have been a little more tender.  Other than that, it was awesome and the gravy was delicious on the mashed potatoes.

From Denny: It's been a wild ride changing internet providers and I was off line for 10 days. I tell ya when you slow down to snail time it takes a while to gear back up to a fast pace. So, rather than try to catch up I've decided to round up what there is and not sweat what there isn't. Gee, can you tell I absorbed "Greek Time" when I visited Santorini several years ago? Greek Time is extremely slow, unhurried and a definite "I'll get around to it" attitude. :)

Summer's disappeared



S'mores... they're not just for camp fires anymore!
So here I am, writing my first post in over a month. It seems like I fell off the face of the earth, but I managed to pick myself up and dust myself off. The last 6 weeks have been a blur of house-guests, out-of town visitors, errands, dinners, more visitors, meetings, work functions, appointments and all on top of the regular day job. Yep

Zesty Slow Cooker Barbeque Chicken

Sometimes, I wish dinner would cook itself.  When I saw this recipe I thought this might come pretty close.  I figure I can put this together in the morning and not worry about dinner the rest of the day.  It will be ready when we are.  I'm hoping this recipe will still be big on flavor even thought it's takes little effort. 

Ingredients (printable recipe)
5 to 6 frozen skinless, boneless chicken breasts (depends on size)
1 (12 ounce) bottle barbecue sauce (1 1/2 cups)
1/2 cup Italian salad dressing
1/4 cup brown sugar
2 tablespoons Worcestershire sauce
Directions
Place chicken in a slow cooker. In a bowl, mix the barbecue sauce, Italian salad dressing, brown sugar, and Worcestershire sauce. Pour over the chicken.
Cover, and cook 3 to 4 hours on High or 6 to 8 hours on Low.

The ingredients
I put the chicken in frozen and poured the sauce on top.  Easy, easy and easy!

The Results...
The chicken cooked on low for 7 1/2 hours and it turned out very tender.  I shredded it using two forks.

This definitely didn't take much effort, but did everyone like it?  Yes, we all did!  I think "zesty" is a good way to describe this barbecue chicken.  It had just enough flavor without being overwhelming for the younger kids.  Even my toddler ate all her chicken for dinner.  I'm always happy when I find a recipe that is easy and the whole family likes.  Yay, for finding another family favorite!

Tua Kieow dtom nam tan (Mung Beans in Sugar Syrup)



You can make a lot of delicious things with mung beans, and this sweet dessert is one of them. It very delightful. And that’s not all, beside that this dessert very delicious, it has a high nutrition value and very easy to make.  But I guarantee you its worth to making this dessert and most of the time little children like this dessert. It’s really good for them because of the nutrition value and they would like it because it’s sweet to which comes from sugar syrup.

Ingredients:
  • ½ cup Mung bean (cut out waste powder, beans and nuts, and then rock out)
  • ¼ cup Brown sugar.
  • ½ cup White sugar (to taste the flavor).
  • 4. 6 cups water.

Preparation:
  1. Separate the good beans and broken beans. Enter by bringing water mixing bowl. 
  2. And poured into beans. Copy beans floating And the black pigment.
  3. Rinse beans thoroughly.
  4. The beans are roasted at a low heat. And the aromatic.
  5. Set water roasted peanut aroma and then only put in a water setting.
  6. When boiling water. Adjust light to low heat until beans are done cooking task a little soft.

Kao Niao Piak Lumyai (Sticky Rice with Longan and Coconut Milk)


Longan is frequently eaten fresh or from the can in which it floats in its own juice, the longan can also be cooked with delicious results. In general, the fruit is considered tastier than the lychee but it is not as juicy. Longan is sometimes used instead of lychees or cherries in fruit salads, sweet and sour dishes and as garnish for cocktail drinks. The fruit has a juicy and sweet taste. For today I bring a dessert.

Ingredients:
  • 1 cup uncooked sticky rice
  • 2 cups longan meat or as much as you like
  • 2 cups coconut milk
  • 1/2 cup sugar
  • 1/2 tsp. salt
  • 2  pandan leaves (cut 1 inch)

Preparation:
  1. Cook sticky rice in boiling water. The water should be above sticky rice for about 2 inches. Use loe-medium heat.
  2. Keep stirring the rice and don't let the rice too dry or too juicy. Be careful, the rice may get burnt at the bottom of the pot.
  3. Add pandanus leaves. Cook for 20 minutes. Notice the rice. When it's cooked, you will see the rice gets bigger. Remember to keep stirring the rice.
  4. Now, Add sugar, longan and cook for one more minute. Then put the rice away from the stove.
  5. Boil coconut milk on low heat. Add salt whenl it's boiling. Turn off the fire.
  6. Put sticky rice longan in a small bowl and top with coconut cream.
  7. Serve warm.

Ka-ree Puff (Chicken Curry Puffs Thai style)

 


Curry puff  is a Malaysian, Singaporean and Thai, snack which is of Malay origin. It is a small pie consisting of specialized curry with chicken and potatoes or any vegetable in a deep-fried or baked pastry shell. The curry is quite thick to prevent it from oozing out of the snack.

A common snack in the region, the curry puff is one of several "puff" type pastries with different fillings, though now it is by far the most common.  Other common varieties include sardines and onions or sweet fillings such as yam.

This Thai curry puffs style make an excellent snack as part of a picnic. Curry Puffs are quite easy to make at home and are worth the effort.

Ingredients:
Filling :
  • 1  cup of finely diced chicken breast meat
  • 1 garlic clove, finely chopped
  • 3 tbsp coriander, finely chopped
  • 2 tbsp freshly ground black pepper
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 120 g. carrot, peeled and finely diced
  • 180 g. potato, peeled and finely diced
  • 1 tsp caster sugar
  • 1 tsp soy sauce
  • 2 tsp lemon juice
  • 1 red chili finely chopped
  • 75 peas, fresh or frozen
Pastry :
  • 300 g. plain flour
  • Pinch salt
  • 75 g. butter, soft at room temperature
  • 75 ml. coconut milk
Preparation:
Pastry : 
  1. Sift the flour in a bowl with the salt and break up the butter into small pinches and add it to the butter. 
  2. Using your hand rup the butter into the flour so that you have a crumb like mixture. 
  3. Add the coconut milk and mix it in with the flour until you have a firm dough. 
  4. Turn the dough out onto a work surface and knead it for 8-10 minutes until you have a pliable ball of dough.
  5. Cover the dough with cling film and refrigerate it for at least 30 minutes but preferably overnight before using.
Filling :
  1. Place the oil in a large saucepan over a moderate heat. 
  2. Add the garlic, fresh coriander, ginger, spring onion, pepper, ground coriander, turmeric and cumin to the oil and cook it for a couple of minutes until the mixture is aromatic. 
  3. Stir in the carrot and potato coating them in the spices and cook for a couple of minutes. 
  4. Add the lemon juice, fish sauce, chili, sugar and a couple of tablespoons of water. 
  5. Leave them to cook for 10-15 minutes, stirring occasionally until the carrot and potato is tender, 
  6. add the peas, return it to the heat for a further 5 minutes. The liquid should be evaporated and the vegetables should be cooked. 
  7. Remove the mixture from the heat and allow to cool.
Curry Puffs : 
  1. Rolls the pastry out so that it is 2-3 mm thick. Cut out 8 cm. rounds with a biscuit cutter. 
  2. Place a small spoonful of the curry mix in the centre of each round. 
  3. Moisten the sides of the pastry with water and fold it over, so that you seal in the filling. 
  4. Mark the edges with a fork and set them aside until ready to cook.
To Cook : 
  1. Heat the oil in a deep fryer, wok or saucepan to 180 - 190 C. Cook a few of the curry puffs at a time until golden brown (around 2 minutes). 
  2. Remove the curry puffs and drain them on kitchen paper and repeat the process, until you have cooked them all.
