Sure you don't need to time the aging process down to the second and chances are two days will suit your fine for a home batch as opposed to the five days some insist upon - in any and all cases though you need to age your egg whites at least a little. Skip this step and you'll never nail the gorgeous texture you're aiming for.

2 - Sweet Stuff

Some will tell you it's all about adding the sugar one spoon at a time and others will advise you put it in a little faster. Truth be told though, it really doesn't matter how you add the sweet stuff, it's all about when you add it. You need to get the sugar into the mx just as soon as the egg whites you're mixing become a little foamy in texture - this usually takes about 30 seconds of beating. The skin they form in the 20-40 minutes drying time is essential for their final shape and texture - don't try and rush things or you'll come out with nothing to show for your efforts.
