Bread in a Bag

Does making homemade bread seem like an all day, messy chore that only grandma can do?  Then, you need to try Bread in a Bag!  This bread dough mixes in a gallon size zipper bag (no messy bowl or fingers to clean-up!).  I admit it does get slightly messy when you knead the dough on the counter, but it will be totally worth it.

Bread in a Bag is simple, easy and fun!  It's a great way to introduce new bakers and kids to making homemade bread.  I helped teach a group of 8-10 yr. old girls at church how to make this bread.  The girls worked in pairs, helping each other measure, mix and hold the bag open.  It worked out great because each bag makes two loaves.  We put the loaves in aluminum bread pans and each girl took one home to bake and share with their family.

Here's the recipe and instructions.  Get ready to change your mind about homemade bread.  It can be simple and fun!  

Ingredients (printable recipe)
5 Cups bread flour (all-purpose works, too)
1 Tablespoon rapid rise yeast
3 Tablespoons sugar
1 1/4 teaspoons salt
3 Tablespoons butter
2 Cups water (130 degrees F.)
cooking spray
Directions
1. In a gallon zippered plastic bag, mix 2 cups flour, yeast, sugar and salt.
2. Add water and butter. Seal the bag and knead the bag with fingers to blend ingredients.
3. Add 2 cups flour and work until well blended. Add remaining flour, knead until dough forms and doesn't stick to the bag (you may need to add some additional flour and continue to mix until dough doesn't stick to bag).
4. Turn dough out onto lightly floured surface. Knead 15-20 times until smooth and elastic. Spray dough with cooking spray; cover with plastic wrap; let rest 10 minutes or until dough passes ripe test (see notes).
5. Punch dough down. Cut dough into two equal portions. Shape dough loaves by rolling the dough with a rolling pin into a 10x6 rectangle forcing out the air bubbles.
6.  Beginning with the 6" inch edge, roll the dough tightly toward you in a jelly roll fashion, Push the roll into the dough as you roll to prevent any holes from forming. Seal by pinching the edge and the roll together with your fingers. Place seam side down in a loaf pan, coated with cooking spray
7. Spray top of loaf with cooking spray and cover with plastic wrap. Let rise in a warm, draft free place until doubled in size, about 20-30 minutes.
8 Bake at 375 degrees F. for 25-30 minutes or until done. Remove from pans; cool on wire racks.
Yield: 2 standard loaves (8 1/2 x 4 1/2 x 2 1/2)

Notes: Ripe test is to gently press two fingers about 1/2" into the dough and remove quickly. If the impression you make remains, the dough is ready for shaping.

The Results...
My own daughter was one of the girls in the group from church.  She enjoyed making this bread.  There's just something special about making your own loaf of bread!  This bread didn't last long.  We ate this bread for breakfast with butter, honey and jam.  We all told her how delicious it was!  Definitely 5 stars for  taste and easiness.  I've made this recipe 5 times now and each time it turns out delicious and it doesn't leave you with a really big mess to clean up.  I plan on making this often now that fall and baking season has arrived!

From Denny:  Oh, how I have missed the Russians on the world stage.  Affectionately deemed as Denny's Fightin' Yard Cats, the Russians never fail to throw paws (at America), amuse by pinning some unlucky misbehavin' ears to the ground in a show of dominance (to Syria) or provoke reasonable people to deeper thought on international issues (yes, the World).

At least the Russians "get it" about discussing world issues in depth and detail as opposed to my American government - and their lazy think tanks.  Those think tank guys spend more time dreaming up catchy political slogans, tweeting arguments on social media, yessing each other in an echo chamber and talking like they skim the news headlines rather than invest in solving serious world problems.  Come to think of it, much of that sounds a lot like the Russian Yes Government in relation to how they behave with Putin...

Fresh Apple Dump Cake

I have an easy and delicious fall recipe for you today, Fresh Apple Dump Cake.  It's perfect for apple season.  This recipe starts with your favorite fresh apples and if you've made a Dump Cake before, then you know how easy this will be! 

Ingredients (printable recipe)
8-10 apples, peeled and chopped
1 teaspoon cinnamon
1/2 cup sugar
juice of 1 lemon
2 heaping teaspoons cornstarch
1 Tablespoon butter
1 cake mix, dry (I used Duncan Hines Butter Golden cake mix)
1 stick butter (1/2 cup), melted
2 Tablespoons cinnamon sugar
Directions
1. Preheat oven to 350 degrees F. Peel, core and chop your apples. Place chopped apples into a 9x13 baking dish. Mix in sugar, cinnamon and lemon juice. Cook apples for 20 minutes. Apples will shrink and release juice.
2. Push apples back with large spoon and drain the juice from the baking dish (you could save the juice to make an *apple glaze if you like). Stir cornstarch and 1 Tablespoon of butter into cooked apples. Level out apples in pan.
3. Dump cake mix over top of the apples. Spread it out evenly. 
4. Drizzle melted butter on top of the dry cake mix.
5. Sprinkle cinnamon sugar on top and bake for about 35 minutes. Let cool and serve with ice cream or whipped cream.

Notes: *If you would like to make an apple glaze, simply mix powdered sugar into reserved apple juice until you get the right consistency. I didn't make the glaze because I thought this dessert was already sweet enough. :)

Also, original recipe says to butter the baking dish before adding the chopped apples. I forgot, but I had no problem with anything sticking to the baking dish.

I LOVE fresh apples!
See the specks of cinnamon mixed into the apples with the sugar and lemon juice, yum!
Here's the juice that I drained after the apples had cooked (save it if you'd like to make a glaze). Don't forget to stir in the cornstarch and tablespoon of butter AFTER you drain the apples.
This is what makes this a Dump Cake! I dumped the cake mix right on top of the cooked apples.
So easy!
Drizzle the melted butter right on top of the cake mix.
Sprinkle the cinnamon sugar on top and it's ready for the oven.
It's delicious both warm and cold and with ice cream or whipped cream. Enjoy!
The Results...
5 stars!  Not only was Fresh Apple Dump Cake easy to make, it was also delicious and my whole family loved it!  Plus, it will make your home smell wonderful as it bakes.  Enjoy :)

Toasted Marshmallows and our meals

The Marshmallow toasted favorites for years. Kids love, dangerous and adults like to have ranked among the desserts of sweet potato pie. Regardless of their use, it is a fact that marshmallows are already much longer than you might expect.

Start with the history of the marshmallow is actually very different from what it is known today. In ancient Egypt, was used for its flavor, and healing abilities. An extract of the herb Mallow, which is known for its ability to relieve pain in the neck was originally the marshmallow. Mallow root tapered, releasing a substance that had several applications. Because the Pharaohs were required to speak too much, it is often left hoarse, in this case, Malvaceae came into popularity.

The Greeks also place plants use, including as an to reduce muscle pain, Burns, and even alleviate serious illnesses such as bronchitis. But in these particular cases, relied mainly on the leaves of the Hibiscus tea, rather than a sweet treat.

Since then the marshmallow has undergone changes in the recipe and rarely includes mallow extract in its composition. There are a variety of recipes, many of which include gelatin, sugar and vanilla extracts, which vary according to the manufacturer, but have become extremely popular in Asia.

The popularity of the marshmallow has grown so much that it even has its own dedicated holiday in Japan. In 1978, as an answer to those who gave chocolate and sweets on the day of Valentine's day, March 15 has been designated as the national day of the Marshmallow to pay tribute to the women of Japan.

Regardless of where it is obvious that marshmallow is a symbolic sweet all the time and has made a mark in the history books. For this it has earned recognition and honor, that you can only enjoy the dish, which includes some toasted marshmallows. And while we may be the only place in camp Favorites, we can always rely on our catering West Texas to whip up a dish that puts this age-old favorite tasty use.

For those who have a Marshmallow here at home, or in the back yard we are truly able to understand what it means to spend some time baking a few sweets together. After all, it's not always about candy treat. Experience that we share together.

Applesauce Muffins

It's week two of back to school.  Everyone knows their schedules and we are starting to adjust with just a few bumps here and there.

My kindergartener tried to convince me that she was sick this morning and needed to stay home.  I was surprised because she likes kindergarten.  I think it was a case of morning tiredness and adjusting to going to school everyday!  My 4th grader forgot her homework at school yesterday and my 8th grader is so busy that between school, a cross country meet and Boy Scouts, I won't see him much today.  I'm just hoping that he doesn't have a lot of homework tonight, too! 

My little buddy and I are also adjusting to having the house to ourselves during the day.  It's not totally quiet, but it is quiet-er.  Sometimes it's actually too quiet.  For example, I was in the kitchen making these Applesauce Muffins and it was so quiet that I could hear the dog licking the floor in the living room.  When there's a toddler in the house, that is TOO quiet!  I went to the living room to find that my sweet (and mischievous) toddler had completely emptied a large bottle of popcorn seasoning (the kind with artificial colors and flavorings) ALL OVER the carpeted floor! UGH!!!  

Ingredients (printable recipe)
1 cup butter, softened
2 cups sugar
2 eggs
1 teaspoon vanilla extract
2 cups applesauce
4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1 cup golden raisins
cinnamon-sugar, optional
Directions
In a bowl, cream butter and sugar. Add eggs and vanilla; mix well. Stir in applesauce. Combine the flour, baking soda and spice; stir into creamed mixture. Fold in raisins.

Fill greased or paper-lined muffin cups three-fourths full. Bake at 350 degrees F. for 20-25 minutes or until toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Sprinkle or dip muffin tops with cinnamon-sugar if desired.
Makes 2 dozen

The Results...
I had everything I needed to make Applesauce Muffins already sitting in my cupboards or in the refrigerator.  I liked that I didn't have to run to the grocery store.  I decided to make these muffins for an after-school snack and the kiddos gobbled these up in the car on the way home.  There were still enough muffins for breakfast the next morning, too.  I liked that this recipe makes 2 dozen muffins.  If that's more than you need, just put the extras in the freezer and pull them out when you do need them.

Applesauce Muffins were dense and cakey with a hint of spice and sweet golden raisins hidden inside.  We liked them and gave them 3 1/2 stars (out of 5). 

Are you wondering what happened to the carpet?  My husband came home while I was out picking up the kiddos from school.  He tried using baking soda and vacuuming up the popcorn seasoning.  It helped slightly.  He suggested we dye the rest of the carpet yellow, too. :)  I don't like yellow carpet, so I got out the carpet cleaner and scrubbed (and scrubbed) until the carpet was beige again.
