Double Layer Pumpkin Cheesecake

Instead of making traditional pumpkin pie this year for Thanksgiving, I'm gonna try this recipe for pumpkin cheesecake.  Half my family likes pumpkin pie and the other half doesn't, but we all love cheesecake.  Does that mean the whole family will like pumpkin cheesecake?  

Ingredients (recipe from allrecipes.com)
2 (8 ounce) packages cream cheese, softened
1/2 cup white sugar
1/2 teaspoon vanilla extract
2 eggs
1 (9 inch) prepared graham cracker crust
1/2 cup pumpkin puree
1/2 teaspoon ground cinnamon
1 pinch ground cloves
1 pinch ground nutmeg
1/2 cup frozen whipped topping, thawed
Directions
Preheat oven to 325 degrees F (165 degrees C).
In a large bowl, combine cream cheese, sugar and vanilla. Beat until smooth. Blend in eggs one at a time. Remove 1 cup of batter and spread into bottom of crust; set aside.
Add pumpkin, cinnamon, cloves and nutmeg to the remaining batter and stir gently until well blended. Carefully spread over the batter in the crust.
Bake in preheated oven for 35 to 40 minutes, or until center is almost set. Allow to cool, then refrigerate for 3 hours or overnight. Cover with whipped topping before serving.

 I made my graham cracker crust by following a recipe from the Better Homes and Gardens New Cookbook.  If you don't have this cookbook you can also find the recipe online at http://www.bhg.com/recipe/desserts/graham-cracker-crust/.
Here's the first layer.
Instead of using separate spices, I just used 3/4 tsp. of pumpkin pie spice for the pumpkin flavored layer.  I poured the pumpkin layer on top of the first layer and put the cheesecake in the oven to bake.

The Results...
Did everyone like this pumpkin cheesecake?  Almost everyone did.  My husband and I thought it was very good.  This was my little girls' favorite dessert.  We also had apple and cherry pie, but their favorite was this pumpkin cheesecake.  My son was the only one that didn't like this cheesecake, but he told me he doesn't like ANYTHING with pumpkin in it.  He won't eat pumpkin bread, pumpkin bars, pumpkin cookies, pumpkin pie and now he can add pumpkin cheesecake to his list.  If you do like pumpkin and cheesecake than I think you'll really like Double Layer Pumpkin Cheesecake.  It was rich and creamy like you'd expect and the pumpkin layer was very mild compared to eating pumpkin pie.  Although my son would disagree, the rest of us thought this was a great holiday recipe and we would definitely eat it again.

Pa Tong Goh (Deep-fried dough stick)


Many cultures have dishes made by deep frying dough of one form or another.  Pa Tong Goh or Deep-fried dough stick is a You tiao in Chinese are popular breakfast foods in Chinese culture. They are 2 different taste in Thailand are savory and oily in taste and sweet taste. The texture is crispy on the outside and chewy on the inside with large cavernous holes.  Pa Tong Goh or Deep fried dough are normally eaten as an accompaniment for rice congee or soy milk and all hot drink in the morning for Thailand.

Ingredients:
  • 2 cups of all purpose flour
  • 1 cup of warm water
  • 2 tbsp of vegetable oil (for mix)
  • 1 tsp of salt
  • 1 tsp of sugar
  • 2 tsp of baking soda  
  • 1 tsp ammonia
  • 2 cups of vegetable oil for fry
Preparations:
  1. Dissolve the salt, baking soda and alum in the water. 
  2. Mix the water and flour into a dough.  Let stand for 15 minutes, then clean your hands and knead until the dough is smooth and elastic.
  3. Place the dough on an oiled surface and roll into a shot strip. 
  4. Cut into short strips. Press two strips together and roll them lengthwise.
  5. Heat the oil and add the dough sticks, a few at a time, and deep-fry, stirring constantly, until golden brown. 
  6. Drain well and serve warm with rice congee or soy milk and all hot drink.

Khao Tou (Stir Sweetness Sun Dried Rice)


Khao Tou is a Thai dessert made from rice, the rest eating.  By make them to the rice mill and then dried thoroughly.  Mix of water with sugar and shredded coconut together. Add roasted rice and stir to first sort mold insert pot.  Baking with smoke fragrant candle and Jasmine flower.

Ingredients:
  • 1 cup sun dried steamed rice.
  • 1 cup Sugar Palm
  • 2 cups shredded coconut
  • ½ cup water
  • Fragrant Candle
  • Jasmine flower

How to cook:
  1. Bring sun dried steamed rice to roast until turn to yellow and crispy and ground thoroughly. 
  2. You should separate out the rough ground and pounded it again.
  3. Mix sugar palm, shredded coconut, water and ground rice in a big pan, picking up scent and heat,
  4. Continue stirring until shredded coconut sticky well.
  5. Poor the roasted rice into pan and stir to combine to raise.
  6. Preparing the mold with oil make easy to bring dessert out from mold and made it clearly see the pattern.
  7. Mold the dessert into a ball size fit with a mold and press firmly and strike out of mold until finish.
  8. Bring all the “Khao Tou” keep in a pot (must big enough)
  9. Add jasmine flower in the pot and turn candles light and place on top of the Khao tou and blow off fragrant candle and then cover the pot.
  10. Leave it over the night.

Salapao Thod (Deep fried Salapao)


Deep fried Salapao is Chinese style breakfast type at most will be sold in the morning on the street food in conjunction with deep-fried dough stick.  As a snack serving with hot coffee, hot tea, and soy milk.  The taste should be crispy outside and chewy inside. Present we can found some at night on the street food also. 

Ingredients:
  • 1 kg of all purpose flour
  • 350 g of palm sugar
  • 3 cups of water
  • 2 tsp of yeast
  • 1 tsp of salt
  • ½  tsp of baking soda
  • 1 tbsp of ammonia
  • oil for fry

Preparation:
  1. Mix flour with baking soda and sift it then add yeast and leave it on the rest plate.
  2. In other blow mix sugar, salt and ammonia to water, stir it until it melt and mix well.
  3. Pour mixed flour into then knead it until it mix well. Leave it for 4 hours.
  4. Sculpt flour to round shape and press it then fry it in hot oil for a while or until it changes color to brown.
  5. Serve hot with hot drink.

Khao Tang Naa Tang (Rice Crackers with Prawn Sauce)



Khao Tang Naa Tang within the meaning of the ancient rice stick frying pan or pot bottom, and then shovel out to dry Stored for a long review. And bring out the shovel and sliced.  Dry under sun dried fried sliced to the rising swell.  Thai Style Rice Crackers served with Prawn Sauce is a Thai snack.  it’s crisp Rice Crackers and serve with a little spicy and sweet sauce.  Most we take on a classic party dish.

Ingredients:
  • 300 g rice cracker
  • ½ cup minced pork
  • ½ cup minced prawn
  • 1¾ cups coconut milk
  • ¼ cup ground roasted peanut
  • 1 dried red spur chili, seeded and soaked in water
  • 1 tbsp  finely sliced garlic
  • 1 tsp finely sliced coriander root
  • 1 tbsp finely sliced shallot
  • 1 chopped coriander plant
  • ¼ tsp pepper
  • 2 tbsp sugar
  • 1 – 2 tbsp fish sauce
  • 4 cups cooking oil, for deep-frying


Preparation: for Rice Crackers 


  1. Bring the rest of cooked rice press in the round or square molding as you desired. 
  2. And bring to dry under the sun 1-2 days and then fried in hot oil.
  3. Preheat the oil over medium heat. Fry the rice crackers a few pieces at a time. 
  4. Turn to brown on both sides, remove and drain.
Preparation: for Sauce
  1. Pound the garlic, coriander root, dried chili and pepper finely.
  2. Bring the coconut milk to the boil over medium heat. 
  3. When a film of oil surfaces, add the coriander paste and sauté until fragrant. 
  4. Add minced prawns and pork, stir to combine and cooked through.
  5. Season to taste with sugar and fish sauce, stir well. 
  6. When the mixture returns to the boil, stir in peanut and shallots. 
  7. Remove from the heat, sprinkle fresh coriander over the top. 
  8. Serve with fried rice crackers or toast.

From Denny:   The year just marches on, doesn't it?  This is a roundup of the past three weeks of various posts.  Oh, how I wish I had the time to write more science posts as I do enjoy being curious about my world.  If it were not for the tense political times requiring constant attention I'd be off writing about art, science, poetry, lots of food,  photography and total humor.

With all the tough economic times it seems like we all have to stay on top of our politicians to get the very best from them.  These days with so much in flux economically, politically, rogue countries struggling to become nuclear states and the last gasps of terrorist organizations still rearing their ugly little heads, I'm focused on writing mostly news.  Like you, I long for a time when Life is easier and a lot more enjoyable.  Those times will come again.  Try to be patient.  And while you are being patient, keep your foot in the backs of your politicians, making them crystal clear aware of what you voted for is what you expect to be delivered.  Game on! :)

Caramelized Brownies

I have a lot of brownie mixes in food storage (too many really).  But, they are great to have on hand for a quick and easy dessert.  We love to eat them plain right out of the oven, but I wanted to try something a little more elaborate.  I'm thinking Paula Deen's recipe for caramelized brownies will turn our ordinary brownie mix into something more scrumptious.

1 cup chopped pecans
4 tablespoon butter
1 package Duncan Hines Chewy Brownie mix
1 cup light brown sugar, firmly packed
Directions
Preheat oven to 350 degrees. Prepare brownie mix according to package directions. Spread batter into a greased 9x13-inch pan. In a small saucepan, melt butter. Add pecans and sugar. Cook and stir over medium heat until sugar dissolves. Drizzle mixture over brownie batter and bake for 25 to 30 minutes.

I already had everything for this recipe in my kitchen.
I followed the directions, but my butter, sugar and pecan mixture didn't turn out runny like a sauce.  Instead it was thick and more like paste.  I wouldn't say I 'drizzled' it over, but instead sprinkled it over the brownie batter.  I baked mine for @ 35 minutes until a toothpick inserted in the middle came out clean.

The Results...
Did we think these were better than plain brownies?  We did!  All the flavors of this recipe went so well together: toasted pecans, rich brown sugar with the chewy, chocolate brownie underneath.  The only thing we were unsure about was the grainy texture of the brown sugar.  I expected it to melt more into a sauce, but it didn't.  I did my best to follow the recipe, but maybe I did something wrong?  Oh well, these brownies were still quite delicious.  I guess I'll just have to try this recipe again.  I really don't think my family will mind!

It's all about the cream

I recently mentioned the amazing Strawberry Panna Cotta hubby and I enjoyed on a day trip to Sausalito, and the memory seems to be a strong one, 'cause I cannot seem to get it out of my mind.
