Blackberry Cobbler

It's that time of year again.  Our blackberry bushes are full of juicy, ripe blackberries.  This cobbler recipe looks simple and delicious and has great ratings from allrecipes.com.  I can't wait to see what my family thinks!

Ingredients (allrecipes.com)
1/2 cup white sugar
1 cup all-purpose flour
2 teaspoons baking powder
1/2 cup milk
1/4 cup melted margarine
2 cups fresh blackberries
1/2 cup white sugar
1 cup water
Directions
Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x9-inch baking dish.
Whisk 1/2 cup sugar together with the flour and baking powder in a mixing bowl. Stir in the milk and margarine until a batter forms. Scrape into the prepared baking dish. Add the blackberries, and sprinkle with 1/2 cup sugar. Pour in the water.
Bake in the preheated oven until the batter has risen and the top is brown, 45 minutes to 1 hour. Cool before serving.  Serves 6.


The Results...
This cobbler had a crispy top and an ooey-gooey bottom.  It was tasty (even better with vanilla ice cream). We all liked it, but we didn't love it.  It was good, but not good enough to make it to our family favorites list.  Most of us didn't care for the ooey-gooey bottom.  My son said it reminded him of baby food.  We still finished off the whole pan, but I will keep searching for a blackberry cobbler recipe that we all love.

Thai Sweet Rice Crackers.


Organic Thai Rice Crack­ers are a deli­cious tra­di­tional Thai snack made from crunchy puffed brown or white rice. These glu­ten free,dairy free treats are hand-made using organ­ic­ally grown pro­duce and are ideal for a healthy snack,kids’ lunch boxes,party nibbles,or an after­noon treat.

Ingredients:
  • 300 gms rice cracker
  • ½ cup water
  • 400 gms Brown Sugar
Preparation:
  1. Bring the rest of cooked rice press in the round or square molding as you desired.
  2. And bring to dry under the sun 1-2 days and then fried in hot oil.
  3. Preheat the oil over medium heat. Fry the rice crackers a few pieces at a time.
  4. Turn to brown on both sides, remove and drain.
  5. Add brown sugar in a saucepan and stir to dissolve, continue boiling, and the sugar will start to change to almost thick turn off the stove.
  6. Take a spoon and make swirls on the rice crackers and leave it to cool.
Note: must top brown sugar when still hot.

Florida is known for their key lime pie and there are fans of it all over the country now. The real secret to making this simple and easy famous pie is to purchase real key limes for the recipe. Key limes are very small, very tart and thin-skinned. When ripe they turn from green to yellow.

Most limes in our American grocery stores are those large beautiful, neon green and thicker-skinned Persian limes. Persian limes are also much less tart so they don't deliver that full flavor to the pie cooks, and tasters alike, desire.

How simple is this pie recipe? Really simple: 100 percent key lime juice, sweetened condensed milk and a good graham cracker crust with a little melted butter, brown sugar and chopped nuts. At our house we make the chocolate graham cracker crust while others choose to use traditional pastry crust. It's your preference."

Cha Yen (Iced Tea)


First of all, try to get a pack of Thai tea which is available at most Thai groceries. You may also want to get two cans of sweetened milk, also available in most oriental grocery.


Ingredients:
  • A pack of Thai tea
  • Hot water
  • Fresh Milk or Coffee-mate cream
  • Sweetened condensed milk.
Preparation: 
  1. Soak a pack of Thai tea about 1 ½ cups in a regular size pitcher (the size used for draft beer in the bar) of boiling water. 
  2. Stir it well for about half a minute. Drain it. You should get a dark brown tea liquid. 
  3. Add the sweetened condensed milk. Stir well. If you like, you may add some coffee-mate cream (about ½ cup). 
  4. Leave to cool down to room temperature. Serve with ice top with fresh milk.
  5. The right color should be dull orange. 

Note: that Thai tea does not easily brew. To use the coffee maker may not work as some part of it may remain untouched.

Fresh Mango Juice (Nam Ma-Muang)



Mango has a great nutritional value as it contains high amount of vitamin A,B,C,E, proteins, carbohydrates and fiber. The packed nutritional goodness helps the immune system to fight against infections like cough, influenza, pimples, acne, fever, measles, typhoid, tuberculosis, eye disorders, heat stroke and diabetes.

Mango can easily be incorporated into beverages, smoothies, jams, yogurt and other dessert mixes, milkshakes, mousses and a number of dairy products. Today I prefer to do the juice…


Ingredients:
  • 2 ripe mangos
  • ½ cup sugar
  • ½ cup water
  • ½ to 1 tsp salt
  • 1 ½ cup boiling water
Preparing:
  1. Preparing the syrup by dissolving ½ cup of water with ½ cup of sugar. Boil until dissolved well. 
  2. Peel the mangoes and cut into small pieces. It should be about ½ cup of mangoes. 
  3. Put it in the blender. Add boiling water, syrup and salt. Blend thoroughly. 
  4. It should give a strong sweet taste since ice will be added when serving.

Pomegranate juice in Syrup (Nam Tub-Tim)


Pomegranate juice is made from the fruit of the pomegranate. It is used in cooking both as a fresh juice and as a concentrated syrup.  Pomegranate juice has many health benefits.  It has shown promise in the prevention of cancer, Alzheimer's disease, and high vitamin C, A, E and  folic acid in good quantities….and much more…  Many people also enjoy its rich taste, making it a welcome beverage.

Ingredients:
  • 3 cups pomegranate seeds (about 4 large)
  • 2 cups water
  • 1 cup sugar

Preparation:
  1. Add pomegranate seeds and a ½ cup of water into the blender.  Spinning for a good resolution.
  2. Then pour into medium nonreactive pot and bring to a boil. Cook for 10 minutes.
  3. Add sugar and ½ cup of water strain mixture through. Lets it boil and turn off the stove…lets it cool.
  4. Store in refrigerator serve cold or add ice.

Note: Be sure to use a nonreactive pot, such as one with a nonstick coating. Aluminum will react with the acid in the seeds, giving the juice a slightly metallic or off taste.

Baked Sweet Soya Bean (Kanom Bpia Sai Tua)


This Baked Sweet Soya Bean one of aromatic smell as symbolizes because scented candle. Most of new generation may never see how look like is the scented candle, later they will know after they eaten or some maybe don’t know that the smell they say is fragrant is the smell of scented candle. So they eat deliciously that sweet taste without knowing the origin of that dessert by using scented candle. Nobody has recorded during the ancient time in written of what period did the Thai dessert originated, only knows that it is a long time ago using the Thai scented dessert. This Baked Sweet Soya Bean not so much sweet...but will a just a little sweet and salty taste...great eaten with hot tea...

Ingredients for 1st Pastry Layer
  • 100 gms Wheat Flour
  • ½  tsp Salt
  • ½  tsp Sugar
  • ½ cup Water
Ingredients for 2nd Pastry Layer:
  • 50 gms Wheat Flour
  • 2 ½  tbsp Oil
  • 5 tbsp Water
Ingredients for Filling:
  • 100 gms Soya Bean
  • 100 gms Sugar
  • 4 tbsp Oil
Ingredients for Glazing:
  • 1 Egg Yolk
  • 1 tbsp water
Preparation of Filling:
  1. Soak the soya beans in warm water for 6-8 hour. Then steam them for 15 minutes.
  2. Put the beans into a blender and blend until fine. 
  3. Add the sugar and continue blending until it's all well mixed. You can also pulp them in a Thai mortar but it takes a bit more work.
  4. Transfer the blended beans & sugar into a saucepan and heat them over a low heat. Stir them until they thicken to a paste, then leave to cool.
Preparation of Pastry:
  1. Mix the flour, pork oil, salt and sugar and some of the cold water to form a dough. Only add just enough water to form the dough.
  2. Knead it until it is smooth. Cut it into 10 equal pieces.
Now the second layer of pastry:
  1. Mix the flour, oil and some of the water to form a dough. As before you only want to add enough water to make the dough.
  2. Cut that dough into 10 equal pieces too.
  3. Take a ball of the 1st pastry and roll it into a disc.
  4. Place a ball of the 2nd pastry in the middle.
  5. Fold up the edges into a ball.
  6. Roll the ball into a flat long strip.
  7. Roll up the strip, turn it through 90 degrees and roll it to a flat strip again.
  8. Roll it up again.
  9. Cut into 3 equal pieces. At the end you should have 30 small balls of pastry.
Final Preparation & Glazing:
  1. Preheat the oven to 180 C
  2. Oil a baking tray and roll the small pastry balls into circular discs.
  3. Add a spoonful of the soya filling.
  4. Fold up the edges and tuck them underneath, as you place them on the baking tray.
  5. Mix the egg yolk with water and glaze the top of the sweets with it.
  6. Bake for 30 minutes until they just start to turn brown
  7. Ready for serve...

Computer Crashed This Week, Back Up Soon



From Denny: It had to happen sooner or later, right? The Dell Dimension was lingering like a slow tortoise crossing the road and stopping traffic. It just turned five years old.

After a few days of trying to fix it on my own I finally admitted defeat and took it into Office Depot. When I got the high quote I knew the Universe was advising me it was time to purchase a new one for practically the same price. It was just a couple of weeks ago I was in there, cruising the tech aisles, drooling over the terrabyte goodies while my husband grinned and shook his head.

So, yesterday, my husband looked at me and looked at the old guy Dell and said it was time to meet the new BFF guy on the block: HP. Happy Birthday to me a few weeks early. My husband turned to me today and said, "Someone's in a better mood - and so much happier. Welcome back to the plugged in human race." :)

Oh, and for the Fourth weekend Office Depot has lots of great sales on computers and other happy tech goodies.  If you are like me, finally having to part with an old friend, take a look around.  Who knows?  You just might meet the new love of your life!
