From Denny: This is about three week's worth of posts. Be sure to check out this post over at the science blog, The Soul Calendar, for the rare 500 year total lunar eclipse coinciding with the Winter Solstice tonight.  I like to write my science with a bit of wit.  It's so much easier to absorb facts when the writing is funny.

Also, lots of funny videos, comedy, jokes from the late night comedians lampooning the news and our crazy Congress. Their idea of "logic" is questionable sometimes. :)

For the Christmas and holiday season there are plenty of music videos to soothe the stress after rushing around shopping and visiting.

I've also started developing the arts blog, Dennys Art Sanctuary. It has been languishing far too long. The plan is to feature various artists along with the arts news.

What's also new is that I've started gathering all my poetry onto one blog, Poems From A Spiritual Heart. There are even poems there that have not posted on The Social Poets first.

Sweet Destination: Algeria

Pecan Cookies

Have you ever wondered why I named this blog, my flickr nickname and even my small, "never taken seriously" home business, SweetAlmond? It all started a few years ago, when I decided to start a small business from home: selling cookies and baked goods. My husband helped me build a website, then it was time to choose a name for that website/business. Since I was concentrating on selling Algerian specialties, Almonds were the first thing that hit my mind. Almonds are the base for most of our sweets. Sweets, Almonds......SWEETALMOND! There it is!

Algerian sweets are very elegant and tasty. They are sweet and nutty. A blend of wonderful flavorings: nuts, vanilla, lemon zest, orange blossom water or rose water. Some are dipped in honey syrup, others beautifully iced and decorated with almond paste flowers. There are so many varieties. New amazing designs, stunning colors and delicate decorations keep popping out. Every time I visit Algeria, I feel so "yesterday" when it comes to these delicacies.

Dziriettes / Almond Tartlets

Pecan Cookies (Mkhabez)

Today's recipe is called "Mkhabez", which translates to "breaded". I know it sounds funny and has nothing to do with sweets. I have no idea where this cookie got its name from, and why such a weird name! Actually, most of our cookies have bizarre names, and even some savory dishes do: "drunk and falling in the stairs", "the judge and his team", and many more interesting ones, let's just leave this discussion for another post!
Back to the recipe. This cookie is very simple: just mix nuts, sugar and the flavor of your choice. Shape, bake for 10 minutes, and voila! All that is left is making the egg white icing and ice the cookies.
You can use any kind of nuts: almonds, walnuts, pecans or even pistachios. You can also add lemon zest (especially with the almonds) or any flavoring of your choice.

Mkhabez (Pecan Cookies)

300 g pecans (or any other type of nuts)
80 g granulated sugar
1 large egg, beaten
1/2 tsp vanilla extract
pinch of salt

1- Preheat the oven to 350F. Spread the pecans on a baking sheet and bake for 5 to 7 minutes. Let the nuts cool for 5 minutes.
2- Reduce the oven temperature to 300F and line a baking sheet with parchment paper.
3-In a food processor, combine the pecans and sugar and pulse until finely ground.
4- Transfer the mixture to a bowl, and add the vanilla and salt.
5- Start adding the beaten egg little by little until you form a dough. It shouldn't be sticky. If you feel that that dough is a bit dry, add more beaten egg, 1 tsp a time. Do this step slowly because this dough will quickly turn wet and sticky and this would make shaping the cookies hard, and even affect the final result.
6- Roll out the dough on a very lightly floured surface to about 1 inch thickness. Cut out shapes using a cookie cutter (any shape would be fine). Arrange the cookies on the baking sheet and bake for 10 to 12 minutes. Leave the cookies to cool before icing.

Icing

1 egg white
1 to 2 cups sifted powdered sugar
1/2 tsp vanilla extract
1 tsp lemon juice
1 tsp vegetable oil

Lightly whisk the egg white. Start adding the sugar little by little until you reach a white shiny icing. The icing should not be too runny nor too stiff. Add the vanilla, lemons juice and oil. You can add food coloring at this point if you would like.
Dip each cookie, one by one, in the icing and arrange them on a cookie rack (with a pan underneath it) to let the excess icing drip. Decorate with pecan halves.

From Denny: A person could spend a lifetime sifting through all the offerings over at YouTube and be happy. What fun to explore, looking for interesting Christmas music to fit a wide variety of reader interests.

Here are the offerings I've gleaned for this year. The first song, YouTube sudden viral hit, is from a newcomer, Becky Kelley, whose father wrote the song after Becky related a conversation from her nephew while they were standing in line to see Santa at the mall.  It's their first published song, a real shock to the music industry who came asking for more of their work.  I guess they had better get busy. :)

And now you have plenty here to help you stress down from  the holiday rush, make you laugh, and even get you pumped back up feeling inspired.

Overnight Crock Pot Oatmeal

Wouldn't it be great to wake up and already have a warm, hearty breakfast waiting for you.  I've been thinking about this lately, especially in the morning when it's hard to roll out of my warm, comfy bed and even think about going out into the cold.  It would be easier if I knew a warm breakfast was waiting for me in the kitchen.  I know the rest of my family feels the same way and I started to wonder if I could make us oatmeal in the crock pot overnight.  So, I searched the internet for recipes and decided to try this particular overnight crock pot oatmeal recipe.  Most overnight oatmeal recipes I found say you MUST use steel cut oats.  Frugalupstate.com did an oatmeal experiment where she used both steel cut and old-fashioned oats in the crock pot.  There were complaints with her original recipe that when using old-fashioned oats the oatmeal turned out too soupy.  It took her and her friends a few tries to get the right consistency using old-fashioned oats.  They concluded that 2 cups of regular/old-fashioned oats are needed in this recipe to get a good consistency.  I'm going to follow her instructions for using old-fashioned oats since that's what I have sitting in my cupboard.  Will we wake up to perfectly cooked oatmeal or a soupy mess?

Ingredients (recipe from frugalupstate.com)
1 cup steel cut or 2 cups regular oats (NOT Quick Oats!)
4 cups water
1/2 cup milk
1/4 cup brown sugar
1  TBS butter
1/2  tsp vanilla extract
1 tsp cinnamon
Directions
Combine all in crockpot and cook on low for 8hrs.  Serve with milk & cinnamon sugar.
Variations:
Add up to 1 C raisins/dried fruit before cooking.
Add 1 chopped fresh apple before cooking.
Top with fresh fruit (in season) or canned fruit (drained).
Add a pat of butter or a dollop of jam/preserves.
Drizzle with honey.

 Simple ingredients
I just mixed everything in the crock pot and let it cook on low for about 8 1/2 hours.
It's done!
The Results...
This obviously wasn't soupy.  It was thick enough to stick to a spoon, but it wasn't perfectly cooked.  Although the simple flavors of brown sugar, vanilla and cinnamon were nice, we had a hard time eating this because of the oatmeal's texture.  It was really overcooked.  It was like eating paste.  This morning my 6 yr. old asked, "what happened to this oatmeal!?"  She usually likes a bowl of oatmeal for breakfast, but she didn't like the extra mushy texture of this oatmeal.  Perhaps this would be a hit at a retirement home (no chewing required), but it wasn't a hit at our home.  Next time, I will try the steel cut oats.
