Holiday Cake: Chocolate Chip Gingerbread

Chocolate Chip Gingerbread

From Denny:  Would this make a beautiful holiday food gift or what?  Who doesn't like chocolate or gingerbread during the holiday season?  The winter white vanilla glaze gives a strong visual contrast for presentation.  We do eat with our eyes...

This beautiful cake would be great for those holiday gatherings to beautify the dessert table.  Come on; if you are able to slightly warm the servings, melting the chocolate chips, then one whiff of that gingerbread and chocolate and this cake will go fast!

Easy Holiday Recipe: Daydream Dessert of Cake, Ice Cream, Slow-Cooked Apple Topping

Advocate staff photo by PATRICK DENNISChoose your favorite dessert ingredients and toss into a slow cooker for your own Daydream Dessert. This one is made with apples, coconut and almonds and served over ice cream.

From Denny:  This is an easy recipe to throw together when you are pressed for time or too tired to make something more elaborate.  The slow cooker crock is to the rescue.  Make this easy topping - which only takes a couple of hours to cook on Low on its own - while you prepare dinner and get the kids organized for school the next day or help with homework.

Remember strawberry shortcake every summer and how easy it is to put together in a snap?  Well, this recipe is just as easy.  While the slow cooker does its work just hop on over to the grocery store and pick up those same pre-made individual sponge cakes and your favorite vanilla ice cream.

This simple cooked topping involves only two apples, a handful of coconut, a small handful of sliced almonds, butter and brown sugar.  Serve on your most decorative dessert plate.  Build with a foundation of an individual sponge cake, a generous dollop of vanilla ice cream and then topped with the hot apple-coconut topping.  Garnish with more almonds and sprinkle with coconut...

3 Tasty Persimmon Recipes: Bread, Cake, Pudding, Persimmon Facts

From Denny:  Persimmons.  Look forward to these every year when they are in season?  Just when you start to forget they exist, then, suddenly they show up in the grocery store.  Pretty much the story of our lives as there is so much abundance around us in the harvest time.  That sends you hurriedly searching yet again for a great persimmon recipe. So, you end up here at this food blog, right? :)

Seriously, these great recipes were recently featured in our local newspaper by an avid persimmon grower with a beautiful persimmon tree in her Louisiana yard, offering great advice on growing and cooking persimmons.  One tree yields a lot of yummy tasty treats to enjoy baking into awesome goodness!  This year her persimmon tree almost broke her record; it produced over 1,500 persimmons.

After a record amount one year, the persimmon tree will take a break next year and produce less.  After harvest, prune the house high tree because you will want it to branch out as much as possible.  Pruning is what keeps a tree producing a lot and prolongs its life for many years.  It's often difficult to reach the fruit at the top of tree so just leave it as food for your neighborhood birds.  They will be sure to thank you!...

Know much about persimmons?  Here are a few fun trivia facts to enjoy:

* the persimmon is native to China

* the persimmon is most widely cultivated in Japan

* in most countries the persimmon is known as the "kaki"

* Persimmons were quite popular during American Revolutionary times as the colonists discovered the fruit from the local Native Americans.  Just check out the earliest White House cookbook from Martha Washington.  Of course, those recipes are difficult to use because they do not contain exact measurements but it's a fun read anyway to see what were the food and entertaining trends of the time.

* America's Native Americans, the Algonquin (a large populous and loose confederation of many tribes located in the regions of New York state, Ontario, Canada all the way down to eastern Kentucky - yes, I had a minor in anthropology at college.), are responsible for the word "persimmon." The Algonquin were quite fond of the fruit, collecting it totally ripe after it fell to the ground and enjoying it immediately.  They also dried the ripe fruit into bricks to create vitamin rich nutrition for the long winter.

* Nutritional value of persimmons:  great source of fiber like most fruit, contain vitamin A, vitamin C, vitamin B6, and potassium and manganese.

* Calorie count is 118 calories per fruit

* Persimmons are a great source for yellow food in your diet.  Yellow, orange and red foods help color your skin a healthy glow.  That's what a lot of people, as they age, forget to include in their diets.  The end result is gray, dull looking skin, along with that gray or white hair, that makes a person look far older than their years.  These foods also help nourish the skin so much it holds back skin wrinkling.  (Not smoking is also helpful if you want your skin to look good.)

* Do NOT eat a persimmon before it fully ripens.  Why?  Wow, is that thing totally too sour!  It is so sour it will send a shiver down your spine, screw up your face into contortions and cause your mouth to only whistle - forget about being able to talk.

* If you are lucky enough to have a persimmon tree in your yard then pick the persimmons  when they are orange and still firm.  The fruit can ripen off the tree at room temperature.  Grocery stores will sell the fruit this way as it is easier to transport the fruit before it fully ripens.

* How do you know when a persimmon is ready to eat?  (That is always my question when I am unfamiliar with a fruit and am not sure about how and when to purchase it.) Touch the persimmon to see if it has the softness of a ripe peach.  You can even hold it up to the light to see if it is almost transparent.  Yep, ready to toss into your mouth for total enjoyment!

* What can you do with the overripe persimmons?  Remove the stems and squeeze out the pulp.  Freeze and use throughout the year. You can use persimmons as an exchange for oil in many recipes.  You use 1-1/2 times the amount of oil amount that was used in the recipe.  Persimmons can be used for any fruit called for in your recipe like you would substitute mashed yams.

However, here is one warning against getting too enthusiastic with using the persimmon pulp to substitute for oil.  Don't use the persimmon pulp to substitute for BOTH the oil AND the fruit pulp called for in the recipe.  There is such a thing as too much of a good thing and it will overwhelm your recipe.  It can overwhelm the recipe by making it too watery.  So, be sure to just use another fruit for the pulp and the persimmon for the oil exchange.

Was inspired to start up this store after viewing on NBC News about the 5,000 plus homeless female military veterans that were the result of sexual assault and rape in the military.  I was so shocked I just had to do something so decided to contribute my artwork, photography, creativity and humor to design for this store that has taken almost two years to create in my spare time.  Thinking of branching out to contribute also to PTSD charities too.  Thanks for taking a look at the store!

Prize Winner: Peppermint-Hot Chocolate Cake, Fudge Filling, Marshmallow Frosting

Photo provided by Southern LivingBritainy Shaw's Peppermint-Hot Cocoa Cake, right, is a runner-up in Southern Living's annual white cake contest. The Southern Living staff dressed Shaw's cake up by wrapping it in cookies. At left is the second-place cake.
Note the cookies dressing up the holiday glam, garnishing the cake.

From Denny:  Love hot chocolate?  Thought of making it into a cake?  Britainy Shaw, 25, of Louisiana (before that she lived in Texas and before that in Montana) decided it was a brilliant idea.  She heard of Southern Living magazine's contest and decided to enter just for fun, taking third for this cake recipe.

She said her thoughts immediately went to her favorite Christmas flavors.  “For some reason, all I could think of were drinks.  I love hot chocolate with peppermint schnapps in it.”

Her cake consists of three layers of buttermilk chocolate cake that is filled with a fudge-mint filling, frosted with peppermint-tinged marshmallow crème frosting.

Shaw said the very first time she made the cake it came out perfect; what luck for an experiment!  “I’ve just always been watching my mom and grandma cook.  I would love to open a bakery one day.”  Her cake is featured on Pages 140-141 of the Southern Living December double issue.

Talk about funny; Shaw was sitting outside, reading a Southern Living magazine, when the company called to inform her that her cake had won.  She was awarded $500 for her first time effort.  That should pay for a few Christmas gifts this year. :)

Easy Summer Dessert: Grilled Pound Cake, Ice Cream, Chocolate, Pineapple

Photo provided by Family Features Grilled Pound Cake With Ice Cream, Pineapple and Chocolate Drizzle is a quick, no-fuss dessert.

From Denny:  This is too easy.  You can grill this entire dessert indoors on a grill pan.  All you do is grill the fresh pineapple until it caramelizes nicely and gets those all important status grill marks.

Brush both sides of the prepared pound cake with butter.  We use clarified butter at our house because it helps your heart by skimming off the artery clogging milk solids and the resulting clear golden oil can also can be used at a higher heat.

Grill the buttered pound cake.  Top with vanilla ice cream and top with your favorite yummy chocolate sauce.  Summer is so easy with winning easy recipes like this classic!

Easy Dessert: Banana Nut Pound Cake Pudding

Photo provided by Family Features Premade pound cake makes this pudding a cinch.

From Denny:  Yet another tasty version of a bread pudding, only this time a prepared and toasted pound cake is used in place of the bread.

This recipe uses candied pecans.  If you can't find them, try roasting your raw pecans in a baking dish at 350 degrees for about 10 minutes - with a little butter like a tablespoon for one-half cup of pecans -  until lightly browned.

After roasting, lightly salt the pecans and add a tablespoon of brown sugar while still hot.  It will melt into the pecans so toss well to coat.  That will get the toasted and sweet taste of commercially prepared candied pecans.  You can make your own roasted candied pecans which are far fresher - and minus all those additive ingredients that seem to alter the full flavor of the nuts.

The beauty of the heavenly mixture of cream and eggs creating a custard for anything immersed in it is a winning combination since baking began.  It's the foundation of many good breakfast casseroles or sweet pudding desserts.

You only require two bananas for this recipe so it is a good choice for what to do with those last remaining bananas sitting on your kitchen counter.  And those broken eggs sitting in the fridge?  This is another way to dispose of those cracked eggs safely - in a baked dish.  I never use cracked eggs for fried or scrambled eggs as those versions of eggs are usually not thoroughly cooked.  Place them in a baked dish like this one and enjoy!
