3 Tasty Persimmon Recipes: Bread, Cake, Pudding, Persimmon Facts

From Denny:  Persimmons.  Look forward to these every year when they are in season?  Just when you start to forget they exist, then, suddenly they show up in the grocery store.  Pretty much the story of our lives as there is so much abundance around us in the harvest time.  That sends you hurriedly searching yet again for a great persimmon recipe. So, you end up here at this food blog, right? :)

Seriously, these great recipes were recently featured in our local newspaper by an avid persimmon grower with a beautiful persimmon tree in her Louisiana yard, offering great advice on growing and cooking persimmons.  One tree yields a lot of yummy tasty treats to enjoy baking into awesome goodness!  This year her persimmon tree almost broke her record; it produced over 1,500 persimmons.

After a record amount one year, the persimmon tree will take a break next year and produce less.  After harvest, prune the house high tree because you will want it to branch out as much as possible.  Pruning is what keeps a tree producing a lot and prolongs its life for many years.  It's often difficult to reach the fruit at the top of tree so just leave it as food for your neighborhood birds.  They will be sure to thank you!...

Know much about persimmons?  Here are a few fun trivia facts to enjoy:

* the persimmon is native to China

* the persimmon is most widely cultivated in Japan

* in most countries the persimmon is known as the "kaki"

* Persimmons were quite popular during American Revolutionary times as the colonists discovered the fruit from the local Native Americans.  Just check out the earliest White House cookbook from Martha Washington.  Of course, those recipes are difficult to use because they do not contain exact measurements but it's a fun read anyway to see what were the food and entertaining trends of the time.

* America's Native Americans, the Algonquin (a large populous and loose confederation of many tribes located in the regions of New York state, Ontario, Canada all the way down to eastern Kentucky - yes, I had a minor in anthropology at college.), are responsible for the word "persimmon." The Algonquin were quite fond of the fruit, collecting it totally ripe after it fell to the ground and enjoying it immediately.  They also dried the ripe fruit into bricks to create vitamin rich nutrition for the long winter.

* Nutritional value of persimmons:  great source of fiber like most fruit, contain vitamin A, vitamin C, vitamin B6, and potassium and manganese.

* Calorie count is 118 calories per fruit

* Persimmons are a great source for yellow food in your diet.  Yellow, orange and red foods help color your skin a healthy glow.  That's what a lot of people, as they age, forget to include in their diets.  The end result is gray, dull looking skin, along with that gray or white hair, that makes a person look far older than their years.  These foods also help nourish the skin so much it holds back skin wrinkling.  (Not smoking is also helpful if you want your skin to look good.)

* Do NOT eat a persimmon before it fully ripens.  Why?  Wow, is that thing totally too sour!  It is so sour it will send a shiver down your spine, screw up your face into contortions and cause your mouth to only whistle - forget about being able to talk.

* If you are lucky enough to have a persimmon tree in your yard then pick the persimmons  when they are orange and still firm.  The fruit can ripen off the tree at room temperature.  Grocery stores will sell the fruit this way as it is easier to transport the fruit before it fully ripens.

* How do you know when a persimmon is ready to eat?  (That is always my question when I am unfamiliar with a fruit and am not sure about how and when to purchase it.) Touch the persimmon to see if it has the softness of a ripe peach.  You can even hold it up to the light to see if it is almost transparent.  Yep, ready to toss into your mouth for total enjoyment!

* What can you do with the overripe persimmons?  Remove the stems and squeeze out the pulp.  Freeze and use throughout the year. You can use persimmons as an exchange for oil in many recipes.  You use 1-1/2 times the amount of oil amount that was used in the recipe.  Persimmons can be used for any fruit called for in your recipe like you would substitute mashed yams.

However, here is one warning against getting too enthusiastic with using the persimmon pulp to substitute for oil.  Don't use the persimmon pulp to substitute for BOTH the oil AND the fruit pulp called for in the recipe.  There is such a thing as too much of a good thing and it will overwhelm your recipe.  It can overwhelm the recipe by making it too watery.  So, be sure to just use another fruit for the pulp and the persimmon for the oil exchange.

Was inspired to start up this store after viewing on NBC News about the 5,000 plus homeless female military veterans that were the result of sexual assault and rape in the military.  I was so shocked I just had to do something so decided to contribute my artwork, photography, creativity and humor to design for this store that has taken almost two years to create in my spare time.  Thinking of branching out to contribute also to PTSD charities too.  Thanks for taking a look at the store!

Persimmon Buttermilk Pudding

“The all new all purpose Joy of cooking”

From the “All New All Purpose Joy of Cooking” by Irma S. Rombauer, Marion Rombauer Becker and Ethan Becker. This is a soft, sweet pudding with an irresistible old-fashioned flavor. Be sure to use very ripe, mushy persimmons.

Serves:  8

Ingredients:

4 to 6 very ripe large persimmons
4 large eggs
2 1/2 cups buttermilk
1/2 stick unsalted butter, melted
1 1/2 cups sugar
1 1/2 cups all-purpose flour
1 1/2 tsps. baking powder
1 1/2 tsps. baking soda
1/2 tsp. ground cinnamon
1/2 tsp. freshly grated or ground nutmeg
1/2 tsp. salt
Whipped cream for serving, if desired

Directions:

1. Preheat oven to 400 degrees. Butter a shallow 3-quart baking dish.

2. Cut persimmons in half lengthwise. Remove the pits. Then scrape the pulp free from the skins with a teaspoon. Purée the pulp in a blender or food processor. If it looks stringy, force it though a sieve with the back of a spoon. Measure 11/2 cups of pulp.

3. In a large bowl, beat the eggs. Then whisk in the 11/2 cups of persimmon pulp.

4. Whisk in the buttermilk and melted butter.

5. In a separate bowl, whisk together the sugar, flour, baking powder, baking soda, cinnamon, nutmeg and salt.

6. Add the dry ingredients to the persimmon mixture and whisk together until well blended. Pour the batter into the prepared pan.

7. Bake in a water bath until a toothpick inserted in the center comes out clean, 35 to 45 minutes.

8. Serve the pudding warm or cold with whipped cream, if desired.

Comfort Food From Louisiana: New Orleans Chef Recipe: Jambalaya For A Crowd

Comfort Food From Louisiana: New Orleans Chef Recipe: Jambalaya For A Crowd: From Denny:  Need an easy recipe for a crowd during Mardi Gras season?  Chef John Besh of New Orleans paired with Zatarain's to create this faster version of jambalaya using Zatarain's Dirty Rice mix.  In fact, the famous chef has a lot of great recipes on their site.

What makes jambalaya so tasty is the browning of the chicken and andouille sausage, mixing in the veggies like celery and onion, some liquid (some people like to use chicken stock in place of water) and then the rice to cook in all those tasty seasonings and juices.

It's a fabulous one-pot meal that is easy to make and a real crowd pleaser.

Comfort Food From Louisiana: New Orleans: Creamy Seafood Jambalaya Pasta

Comfort Food From Louisiana: New Orleans: Creamy Seafood Jambalaya Pasta: From Denny:  Need a quick pasta dish finished in 30 minutes?  Zatarain's created a product using the traditional jambalaya seasonings but with pasta noodles instead of rice!  If you want to include more than shrimp, like some tilapia or other fish, then cook these first and set aside.

Cooking shrimp separately to be added by the diner is also a good idea if you have diners who don't like shrimp or are allergic.

Comfort Food From Louisiana: New Orleans Chef Recipe: Crabmeat-Shrimp Fritters, Creole Tomato Dressing

Comfort Food From Louisiana: New Orleans Chef Recipe: Crabmeat-Shrimp Fritters, Creole Tomato Dressing: From Denny:  Like to make easy fritters for the family for a quick meal?  I sure remember those yummy clam or corn fritters my mother used to make on Saturdays when I was a kid.  Apple fritters are equally tasty, especially when dusted with some cinnamon and sugar.  So, when I run across yet another variation to The Fritter Family then I'm game to try it.

This new fritter recipe comes from New Orleans Chef John Besh and Zatarain's.  Claw crabmeat, corn and small shrimp are featured in this recipe along with its own special tomato creole dressing.  Pull out your food processor to make this easy tasty dressing of Creole seasoning, garlic, Creole mustard (like stone ground mustard) and tomato.  Chill for an hour and then you are off to the dinner races!

Comfort Food From Louisiana: Mardi Gras: New Orleans West Bank Chicken Wings

Comfort Food From Louisiana: Mardi Gras: New Orleans West Bank Chicken Wings: From Denny:  When I think of Mardi Gras the first images that come to mind are all the wonderful parties and delicious food.  Of course, I do - it's Louisiana!

One thing is for sure we are all often short on time to prepare our favorites dishes so I've decided to post onto this blog my favorite recipes from the Zatarain site.

They are a New Orleans based company that provides products to short cut the Cajun cooking process from slow food to a more efficient use of our time.  I prefer to cook "from scratch" most of the time but there are those times when we all turn to a faster way to prepare our favorite dishes...

Holiday Cookie: Double-Shot Mocha

From Denny:  OK, never write a cookie post right before lunch.  It all looks so good you want to rush into the kitchen and start baking! :)  This cookie recipe is basically a dense brownie with pools of melting chocolate oozing out when you break them open straight out of the hot oven!

There are two cups of chocolate chips and chocolate chunks in this awesome recipe, certainly more than I'm used to baking.  It's no wonder you can get your chocolate fix in one small cookie all at once.

If you have the discipline to wait until the cookie cools all those chocolate pools solidify into huge nuggets of gooey goodness.  No one ever said these little chocolate gems would last long in your house - or mine!

Peace Christmas Star Round Ornament

Enjoy the profound Peace of the Christmas season!

Double-Shot Mocha Chunks

Yield: 3 dozen cookies

From:  King Arthur Flour

Hands-on time:  10 mins. to 15 mins.

Baking time:  10 mins. to 10 mins.

Total time:  20 mins. to 25 mins.

Ingredients:

  • 1/2 cup butter, melted
  • 1 cup brown sugar
  • 3/4 teaspoon baking powder
  • 1 teaspoon espresso powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2/3 cup Dutch-process cocoa
  • 1 3/4 cups King Arthur Unbleached All-Purpose Flour or King Arthur White Whole Wheat Flour
  • 1 cup semisweet or bittersweet chocolate chips
  • 1 cup chocolate chunks: semisweet or white

Directions:

1) Preheat the oven to 350°F. Lightly grease or line with parchment two cookie sheets.

2) In a medium bowl, mix together the melted butter, sugar, baking powder, espresso powder, and salt.

3) Add the eggs and vanilla, beating until smooth.

4) Stir in the cocoa powder and flour; the dough will be stiff.

5) Mix in the chocolate chips and chunks.

6) Drop the cookies by tablespoonfuls (about 1 1/2" balls) onto the prepared baking sheets, leaving about 1 1/2" between them. A tablespoon cookie scoop works well here.

7) Bake the cookies for 10 minutes. Remove them from the oven, and allow them to cool on the pan.

Tips from our bakers

  • Reader Mrs. M. says she makes a "Chunky bar" variation of these with 4 ounces (2/3 cup) chocolate chips, 4 ounces (3/4 cup) raisins, and 4 ounces (3/4 cup) peanuts, instead of all chocolate chips and chunks. We found that these cookies will be VERY soft coming out of the oven, but don't panic; they'll firm up nicely as they cool. Thanks, Mrs. M!

  • For slightly flatter cookies, bake on a greased (not parchment-lined) cookie sheet; and press them down gently with your fingers before baking.

Easy Triple Layer Mud Pie

Hummingbird Bakery Mississippi Mud Pie
Another delectable version of mud pie from Hummingbird Bakery and minniephoto @ flickr

From Denny:  This is an easy recipe for those chocolate lovers who are in a hurry to whip up a dessert and then forget about it for a few hours while it chills in the fridge.

Simple pies like this are also perfect for tailgating to those special sports events.

All you need for this simple dessert is part of a can of sweetened condensed milk, 3 squares of semi-sweet chocolate, a prepared chocolate cookie crumb pie crust, a chocolate instant pudding mix, some two percent milk, 1/2 cup chopped nuts and a small tub of frozen whipped topping of your choice.

What could be easier than that?  Hmmm... buying it already made at the grocery store?  :)  But this pie will taste so much better since you made it!

Triple Layer Mud Pie

From:  Gevalia coffee - my fav coffee site that started putting up recipes lately

Gevalia customer and chocolate lover, Jennifer Birdsley, shared this creamy, crunchy, chocolatey treat with us. To add even more oomph, she serves it with a chocolate flavored Gevalia coffee.

Ingredients
  • 3 squares (1 oz. each) semi-sweet chocolate, melted
  • 1/4 cup canned sweetened condensed milk

  • 2 pkg. (3.9oz. each) chocolate instant pudding mix
  • 2 cups cold 2% milk
  • 1 tub (8oz.) frozen whipped topping, thawed
Directions

  2. BEAT pudding mixes and 2% milk with whisk nuts. Stir half the whipped topping into layer in crust.
  3. Top with remaining whipped topping. Refrigerate 3 hours.

Flavor Tips
