Fast Holiday Candy Recipe: Pecan-Raisin Clusters

From Denny:  Talk about a simple recipe that is fast to create!  Perfect for holiday entertaining this little gem of a recipe comes from Cynthia L. Nobles and it was featured in our local Louisiana newspaper a couple of months ago.  Of course, I quickly recognized it's worth as a recipe perfect for the holidays, whether it's gift-giving or entertaining the friends and relatives! :)

Do you have a little leftover morning coffee?  This recipe uses up a few tablespoons of it so no need to throw it out after all.  I mean, really, when you can make a chocolate recipe with some leftover morning coffee who said being frugal couldn't be fun and tasty?...

If you want to tone down the sugar level in this recipe then consider using Ghiradelli's 60 percent chocolate chips which are not as sweet as Hershey's and other brands.  Instead of traditional raisins you could use the white raisins which do not taste quite as sweet to me.  Of course, I'd add espresso or French roast coffee for that more intense taste to balance the chocolate.  You could even add about 1/2 teaspoon of pure vanilla extract (no substitutions of imitation vanilla, please).  Even the nuts can be exchanged:  pecans for almonds, walnuts, cashews or hazelnuts - whatever your desire!

Beautiful and Easy: Decadent Chocolate Mousse Pie

Photo provided by Spice IslandsFor a delicious chocolaty dessert to celebrate Valentine's Day, try Decadent Chocolate Mousse Pie. It combines a chocolate crumb crust with semisweet chocolate chips and heavy cream -- a combination sure to appeal to most palates.

From Denny:  I love searching through the recipe databases of various companies promoting their food products.  You never know what gems you will find to inspire you to try something new or tweak a family favorite.

The recipe database at Spice Islands is a real treasure trove of goodies - and I've only started on the dessert section!  Color me into the Well Impressed Corner. :)

All this delectable recipe requires is an already prepared chocolate crumb crust you can purchase at your grocery store and then melting the chocolate chips into some of the heavy cream in a microwave.  You add your cinnamon and vanilla extract.

Yeah, I know, but what about adding the powdered sugar?  Did you forget it?  How they handle that is first they cool down the chocolate-cream mixture by placing it in a bowl over another bowl of ice and water.

Then you pull out your trusty electric mixer to whip up the remaining whipping cream into soft peaks.  Add the powdered sugar at this stage.  To keep the volume going on the pie so it looks beautiful mounded up in the pie shell, you first stir in one-third of this whipped cream into the warmer chocolate mixture.  This also equalizes the temperature of the two mixtures.

After that you carefully fold in the remaining whipped cream ever so gently.  Folding into a mixture is a slower rounded motion, not a fast slicing motion like stirring.  Remember those Julia Child episodes with Jack Pepin or the movie about her?  Julia could opine on the importance of proper folding technique for a good 15 minutes of air time.  Yeah, like that.

Once everything is gently combined you spoon it into the pie crust and chill.  When it's time to serve feel free to garnish with additional whipped cream, shaved chocolate or chocolate sprinkles and maybe some fresh berries for beautiful color contrast whether you serve it plain or adorned with more snowy white whipped cream.

Decadent Chocolate Mousse Pie

Serves: 8 - Makes 1 (9-inch) pie
Ingredients:
1 (9-inch) prepared chocolate crumb crust
1 1/4 tsps. ground Saigon cinnamon, divided
1 (12-oz.) pkg. semisweet chocolate chips (2 cups)
11/2 cups heavy cream, divided
2 tsps. vanilla extract
1/4 cup powdered sugar

Directions:
1. Sprinkle chocolate crust with 1/4 teaspoon cinnamon. Set aside.
2. Combine chocolate chips and 1/2 cup whipping cream in a medium-sized microwave safe bowl. Microwave on high (100 percent) for 1 to 2 minutes or until melted and smooth, stirring every 30 seconds. Stir in remaining 1 teaspoon cinnamon and vanilla extract.
3. Chill chocolate mixture in an ice water bath, stirring frequently until chocolate is cooled to room temperature.
4. Beat remaining 1 cup whipping cream on high speed of electric mixer, gradually adding powdered sugar, until soft peaks form. Stir 1⁄3 of the whipped cream into chocolate mixture. Gently fold in remaining whipped cream; spoon into crust. Cover and refrigerate 2 to 3 hours or until set. If desired, garnish with additional whipped cream, chocolate sprinkles or fresh berries.

Valentines Day: Chocolate Chip Butterscotch Pie

Pie
From Denny:  Pies are always an easy idea for holidays as they take less time and fuss than individual portion recipes.

This is a light taste of chocolate and butterscotch.  If you want to intensify those flavors, step up the chocolate chips to 3/4 cup, instead of 1/2 cup.  You could even drizzle the finished chilled pie with extra chocolate syrup to add that decadence factor.

As to intensifying the butterscotch flavor, why not add a few microwave melted caramel candies to the mix?  Or you could add more butterscotch chips instead of taking the time to melt caramels.

Most people prefer a light taste to dishes.  At our house we often like spicy dishes and strongly flavored desserts.  So, if it's supposed to taste like chocolate and caramel, we want it to be obvious.

I really think this cook was showcasing the mascarpone cheese above the other flavors, so a different name would have been a better idea since the chocolate and butterscotch flavors tend to be background in this pie. The choice is yours:  simple and creamy cheese with a light taste of chocolate and butterscotch - or kick it up a notch to just a bit more!

When I think of Valentine's Day it's often for creamy textured dishes as much as the all time favorite of chocolate.  Yes, a great Mac 'n' Cheese dish would definitely qualify. :)  Check out one of my other food blogs for some great recipes on that front:  Comfort Food From Louisiana.

Meanwhile, I like this simple creamy sweet cheese pie with hints of chocolate and butterscotch.

Chocolate Chip Butterscotch Pie

From:  Sunny Anderson

Servings:  4 - 6

Difficulty:  Easy

Cook Time:  30 - 60 min

Ingredients:

  • Butterscotch Sauce:

  • 2 tablespoons butter
  • 1/2 cup light brown sugar
  • 1/4 cup light corn syrup
  • Pinch salt
  • 1/4 cup heavy cream

  • Pie Filling:

  • 8 ounces mascarpone cheese
  • 1 1/2 cups heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • Pinch salt
  • 1/2 cup mini-chocolate chips
  • 1 (6-ounce) pre-made chocolate cookie pie crust (recommended: Oreo or Keebler)

  • Directions:

  • For the butterscotch sauce, melt the butter in a sauce pot over medium-high heat. Add the brown sugar, corn syrup, and salt. Bring to a simmer and stir until golden amber in color, about 10 to 15 minutes. Remove from heat and slowly stir in the cream. Remove from the heat and set aside to cool.
For the filling, add the mascarpone cheese and the heavy cream to a large bowl and whisk until combined. Add the sugar, vanilla, and salt. Whisk until soft peaks form, then fold in the chocolate chips. Pour the filling into the crust, smoothing out the pie surface.
Refrigerate for at least 3 hours and serve drizzled with butterscotch sauce.

Chefs Recipe 4 Valentines Day: Warm Chocolate Cheesecake

Chocolate cheesecake with strawberry sauce and...
Another version of chocolate cheesecake - Image via flickr

From Denny:  Looking for an easy to make chocolate cheesecake?  Chef Sara Moulton is always coming up with great ideas that are simple to make.

Usually, we serve cheesecake chilled.  Have you ever thought of eating your cheesecake while still warm from the oven?  Sara likes this recipe to enjoy that warm creamy chocolate delight.

Sara bakes these chocolate cheesecakes in small ramekins.  She didn't offer up a photo but check out the awesome one I found of another version of chocolate cheesecake at flickr, decked out in blackberries.

    Warm Chocolate Cheesecake

    Sara Moulton's Everyday Family Dinners

    Servings:  4

    Difficulty:  Easy

    Cook Time:  min

From Sara:  Although I'm not a fool for traditional cheesecake, I'm very partial to this chocolate version, especially when it's eaten warm. It is deeply chocolate and it boasts the slight tang of cream cheese. Its texture changes completely, depending on when it's eaten: It's creamy right out of the oven and quite firm after it's been refrigerated (although the kids tend to dog it before it makes it to the fridge). I like it in its natural state, ungarnished. Ruthie likes to sprinkle fresh raspberries on it.

    Ingredients:

  • One 3.5-ounce bar bittersweet chocolate
  • 8 ounces full-fat or 1/3-less fat cream cheese (Neufchatel)
  • 1 teaspoon pure vanilla extract
  • 1/4 cup plus 2 tablespoons sugar
  • 2 teaspoons unbleached all-purpose flour
  • 1 large egg

  • Directions:
    1. Preheat the oven to 350°F. Butter four 1/2-cup ramekins and place them on a rimmed baking sheet.
    2. Coarsely chop the chocolate and melt it in the top of a double boiler or in a metal bowl set over a saucepan of simmering water. Combine the chocolate with the cream cheese and vanilla in the bowl of a food processor fitted with the chopping blade. Process until well blended.
    3. Stir together the sugar and flour, add it to the processor, and blend it into the chocolate mixture. Add the egg and pulse until smooth. Divide the batter among the ramekins.
    4. Bake for 20 to 25 minutes, or until the centers are set. Transfer to a cooling rack to cool slightly before serving.

National Chocolate Cake Day Today! 2 Recipes

From Denny:  Like anyone had to inform the chocolate hounds that today is a special day. We all know we sure don't pay much attention to any other holiday - excepting Valentine's Day - 'cause only chocolate holidays rule. :)

What are the goals of National Chocolate Cake Day?  The Obvious:  bake and decorate a wonderful chocolate cake and then enjoy it with a few friends! Now that's what I call a plum assignment.

First off, everyone should have at least one basic good Simple Chocolate Sheet Cake in their bag of magic baking tricks.  This will make you a big hit at family or sports gatherings - read that at tailgating too.

People can cut the small or large size they desire.  Of course, the cake can end up looking like a bit of a messy disaster that way so usually most cooks choose to pre-cut the pieces.  I usually cut mine into long fingers like 1-inch x 3-inches.  The dieters (and the diabetics who are supposed to behave but can't) can slice that in half - and the Hungry Jacks can take two.  Everyone is happy!

Then try the Mexican Chocolate Fudge Pecan Cake where cinnamon is added to a basic chocolate and buttermilk cake.  Chocolate and cinnamon are natural pairings and the result is wonderful.

    imple Chocolate Sheet Cake
    Ingredients:
    1-1/4 cups (6-1/4 ounces) all-purpose flour 3/4 cup (2-1/4 ounces) Dutch-processed cocoa
    1/4 teaspoon salt
    8 ounces semisweet chocolate, chopped
    12 ounces unsalted butter
    4 large eggs
    1-/12 cups (10-1/2 ounces) sugar
    1 teaspoon vanilla extract
    1 cup buttermilk
    1/2 teaspoon baking soda
    Directions:
Adjust oven rack to middle position and heat oven to 325 degrees F.
Line a 13- x 9-inch baking pan with aluminum foil and spray lightly with nonstick cooking spray.
Sift together flour, cocoa and salt in medium bowl; set aside. Place chocolate and butter in the top half of a double boiler over barely simmering water and stir until melted together. Do not let boil.
Whisk together eggs, sugar and vanilla in medium bowl.
Whisk chocolate into egg mixture until combined. Combine buttermilk and baking soda; whisk into chocolate mixture, then whisk in dry ingredients until batter is smooth and glossy. Pour batter into prepared pan; bake until firm in center when lightly pressed and toothpick inserted in center comes out barely clean, about 35-40 minutes.
Let cool on wire rack until room temperature, at least 1 hour; serve, or ice with frosting if desired.

    Creamy Milk Chocolate Frosting
    Ingredients:
     1/2 cup heavy cream
1 tablespoon light or dark corn syrup
     Pinch salt
     10 ounces milk chocolate, chopped
1/2 cup (2 ounces) confectioners’ sugar
8 tablespoons unsalted butter, cut into 8 pieces and chilled
    Directions:
Combine cream, corn syrup, and salt in liquid measuring cup and microwave until simmering, about 1 minute, or bring to simmer in small saucepan over medium heat.
Melt chocolate in top half of double boiler. Add hot cream mixture, whisking constantly. Melted chocolate might seize at first but keep whisking and it'll smooth out.
Pour into food processor, add confectioners’ sugar and process to combine, about 30 seconds. With processor running, add butter 1 piece at a time; process until incorporated and smooth, about 20 seconds longer.  Transfer frosting to medium bowl and let cool at room temperature, stirring frequently, until thick and spreadable, about 1 hour.

    Mexican Chocolate Fudge Pecan Cake

The Pastry Queen: Royally Good Recipes from the Texas Hill Country's Rather Sweet Bakery & Cafe

The Pastry Chef's Baking blog - "This is one of the few cakes where I'd advocate including the nuts since they're part of the glaze, not the cake itself.  In the glaze, the crunch of toasted pecans adds the perfect flavor and texture complement to the sweet glaze.  The cake batter is easy to make but a bit thin so strain the batter as you pour it into the pan if you have any flour lumps.  Flour lumps do NOT go away in baking.  The cake has excellent flavor and a soft, moist texture.  The glaze makes it rich and chocolaty and the pecans add a nice crunch.  Oh, and if you notice from the picture, I went off recipe and didn't bake in a tube or Bundt pan but used a couple of 8" pans.  No particular reason why but I ended up liking it this way better since it gives more surface area for the glaze." - Carol Ramos

    Mexican Chocolate Fudge Pecan Cake

    Ingredients:

    Cake
1 cup (2 sticks) unsalted butter
1/2 cup unsweetened Dutch-process cocoa powder
    3/4 cup water
    2 cups sugar
    2 large eggs
    1 cup buttermilk
    2 tablespoons vanilla extract
    2 cups all-purpose flour
    1 teaspoon baking soda
    1 1/2 teaspoons ground cinnamon
    1/4 teaspoon salt

    Chocolate-pecan glaze

    1 cup pecans
1/2 cup (1 stick) unsalted butter
    1/4 cup whole milk
1/2 cup high-quality dark cocoa powder, such as Scharffenberger
2 cups sifted powdered sugar (sifted then measured)
    1 tablespoon vanilla extract
    1/4 teaspoon salt

    Directions:

    1.     Preheat the oven to 350° F.  Grease a 9-inch tube pan or a 10- to 12-cup Bundt pan with butter, sprinkle lightly with flour and tap over the sink to remove any excess.

    2.     Melt the butter in a large saucepan over medium-low heat.  Add the cocoa and whisk until smooth.  Add the water and whisk until smooth.  Be careful not to boil the mixture.  Remove the saucepan from the heat.  Add the sugar, eggs, buttermilk, and vanilla to the warm cocoa mixture all at once; whisk until smooth.  Add the flour, baking soda, cinnamon and salt all at once; whisk until the dry ingredients are completely incorporated.  If there are lumps, strain the batter as you pour it into the pan.

    3.     Bake for 40 to 45 minutes; the cake is done when it has pulled away slightly from the sides of the pan and feels firm to the touch.

    4.     Let the cake cool in the pan about 20 minutes.

    5.     Meanwhile, make the glaze: Arrange the pecans on a baking sheet in a single layer and toast them in the 350 degree oven for 7 to 9 minutes, until golden brown and aromatic.  Chop the pecans.

    6.     Melt the butter over low heat in a medium saucepan.  Add the milk, cocoa, and powdered sugar and whisk until glossy.  Remove the saucepan from the heat and whisk in the vanilla, salt and pecans.

    7.     Loosen the cake with a knife or spatula and overturn it onto a serving plate.  Spoon the glaze over the cooled cake, covering it thoroughly.  Don’t worry if some of the glaze pools inside and around the cake.  This cake will keep up to 3 days, covered, at room temperature and glaze just before serving.
