Cookies: Almond Nuggets with Chocolate Drizzle

From Denny:  Chocolate and almonds are the ideal combination for a cookie.  This is basically a sugar cookie with sliced almonds that makes for a stiff dough.

It is a simple exercise of dropping the cookie dough onto the cookie sheet - so that makes it easy even for beginner bakers.  The chocolate comes in when you ice the cookie with bittersweet chocolate that has been melted together with real butter and almond extract.

What's amusing is how the recipe creator actually thinks these mere 24 cookies will last long enough to make it into a covered container.  Bring your friends! :)

Almond Nuggets with Chocolate Drizzle

From:  Spice Islands

Prep Time: 10 minutes

Bake Time: 15 minutes

Serving Size:  1 nugget (cookie)

Yields: 24 cookies

Ingredients

  • 2 eggs

  • 1/2 cup sugar

  • 2 teaspoons Spice Islands Vanilla Extract

  • 1/2 teaspoon almond extract

  • 1 teaspoon baking powder

  • 1 cup all-purpose flour

  • 1/3 cup sliced almonds

  • 2 ounces bittersweet chocolate

  • 1 tablespoon butter

  • 1/2 teaspoon almond extract

Directions

Preheat oven to 325ºF. Spray baking sheets with cooking spray.

Whisk eggs, sugar, vanilla extract and 1/2 teaspoon almond extract in a medium bowl. Add baking powder, and blend thoroughly. Stir in flour and almond slices and mixing until completely combined. The batter will be stiff.

Drop by heaping teaspoon onto baking sheets. Bake for 15 minutes or until the edges of the nugget start to brown. Cool on a wire rack.

Melt chocolate and butter in a heavy saucepan over low heat; stirring constantly. Add 1/2 teaspoon almond extract. Drizzle chocolate over top of each nugget. Store in tightly covered container.

Cookies: Spiced Chocolate Macaroons

Chop Chocolate So It Will Melt Quickly
From Denny:  Do you like spice cookies but crave the addition of chocolate?  This cinnamon and chocolate pairing also happens to improve as the cookie ages.  What could be better than that? A stale cookie that tastes great! :)

The cookie also contains the background dark note from a hint of cloves like I like to use in my morning stovetop cooked oatmeal.  There is nothing like the pairing of cinnamon and cloves to add richness to a dish whether sweet or savory.

The nut used in this cookie is slivered almonds.

Spiced Chocolate Macaroons

From:  McCormick

Makes:  4 dozen or 24 (2 cookie) servings

Prep Time:  20 minutes

Cook Time:  10 to 12 minutes per batch

8 ounces blanched almonds or slivered almonds (1 1/2 cups)
1 1/4 cups sugar, divided
4 ounces unsweetened or semi-sweet baking chocolate, chopped
2 egg whites
1 tablespoon kirsch or water

1. Preheat oven to 325°F. Line baking sheets with parchment paper; set

aside.

2. Place almonds, 1 cup of the sugar, cinnamon and cloves in food
processor; cover. Process just until nuts are finely ground. Add chocolate;
cover. Process until chocolate is finely grated, but not melted. Add egg
whites and kirsch; cover. Process just until dough clings together.

3. Place remaining 1/4 cup sugar in small bowl. Shape dough into 1-inch
balls (dough will be sticky). Roll balls in sugar to coat. Place about 2
inches apart on prepared baking sheets. Using the bottom of a glass, flatten

balls to about 1/4-inch thickness.

4. Bake 10 to 12 minutes or until tops are set but centers remain moist. Do
 not overbake. Cool on baking sheets 1 minute. Remove to wire racks;
cool completely.

Nutter Butter

Life-saving Almond Cookies... it could happen!

The other day I was wandering aimlessly through the grocery store - one of those days where I couldn't seem to remember what the heck it was I needed to get, so I just walked up and down the aisles hoping to jog my memory. And before you recommend I make a list next time, I had. I forgot it. Yup, I was totally bringing by A-game that day.... But

les macarons parisienne

As many of you already know, or are finding out, I **LOVE** Paris. I love the architecture, the shopping, the language, the culture, the people... everything - especially the FOOD. And one of the Frenchest (is that a word? yes, I'm going to go ahead and decide it is) things you can eat while in Paris is le macaron. You can hardly walk down the street without seeing these shiny, colourful

Petits Boutons de Financiers

A few years ago, while visiting friends in London, hubby and I took a quick jaunt over to Paris for three whole days and two nights. I was my first trip to France, and as soon as I stepped of the train at the Gare du Nord, I felt like I was home. Everything about that short three days was wonderful, save the sore feet... you see, we tend to enjoy seeing a new city on foot, so that's how we
