Chef Cookies: Cinnnamon-Espresso Chocolate Chip Vegan Style

Espresso Chocolate Chip Cookies
Espresso Chocolate Chip Cookies (Photo credit: MomPOM/Jenn)

From Denny:  Raise your hand if you love the combination of coffee, chocolate and cinnamon.  Yeah, I thought so; me too.   This easy recipe is from Chef Chloe Coscarelli, a winner of the Food Network's "Cupcake Wars."

Over at MSNBC's "The Today Show" Chef Chloe served up two cool vegan recipes, one for pasta and the other for chocolate, espresso, cinnamon cookies. (The pasta recipe is over at The Healing Waters, my health blog, go here.)

When you feel like eating something vegan and chocolate at the same time, try giving this interesting recipe a try.  Check her out in the video clip too:

Cinnamon-Espresso Chocolate Chip Cookies

From:  Chef Chloe Coscarelli, a winner of the Food Network's "Cupcake Wars."

Servings:  Makes 26 cookies that are 3-inch across

Ingredients
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup vegan margarine
  • 3 tablespoons instant espresso powder
  • 1 cup powdered sugar
  • 1/2 cup packed brown sugar
  • 1.5 cups semisweet chocolate chips (dairy-free)
  • About 1/4 cup granulated sugar for sprinkling
Directions
Make ahead tip: Cookie dough can be made in advance and kept refrigerated for up to one week or frozen for up to one month.
Preheat the oven to 350 degrees Fahrenheit. Line two or three large baking sheets with Silpat or parchment paper.
In a medium bowl, whisk together flour, baking powder, cinnamon and salt.
Using a mixer, beat margarine and espresso powder until well combined. Add powdered sugar and brown sugar, and beat until combined. Mix in the flour mixture 1/2 cup at a time. If dough seems too dry to scoop, add 1 to 2 tablespoons water. Stir in chocolate chips.
Scoop about 2 tablespoons dough at a time. Roll each scoop in a small plate of sugar. Place each scoop, round side up, on the prepared baking sheets, about 2 inches apart. For crisp cookies, gently flatten the dough with the palm of your hand. For soft cookies, leave as is. Bake about 12 to 14 minutes, or until the edges are browned. Let cool and serve.

Chefs Recipe 4 Valentines Day: Warm Chocolate Cheesecake

Chocolate cheesecake with strawberry sauce and...
Another version of chocolate cheesecake - Image via flickr

From Denny:  Looking for an easy to make chocolate cheesecake?  Chef Sara Moulton is always coming up with great ideas that are simple to make.

Usually, we serve cheesecake chilled.  Have you ever thought of eating your cheesecake while still warm from the oven?  Sara likes this recipe to enjoy that warm creamy chocolate delight.

Sara bakes these chocolate cheesecakes in small ramekins.  She didn't offer up a photo but check out the awesome one I found of another version of chocolate cheesecake at flickr, decked out in blackberries.

Warm Chocolate Cheesecake

From:  Chef Sara Moulton

Sara Moulton's Everyday Family Dinners

Sara Moulton's Everyday Family Dinners

Servings:  4

Difficulty:  Easy

Cook Time:  min

From Sara:  Although I'm not a fool for traditional cheesecake, I'm very partial to this chocolate version, especially when it's eaten warm. It is deeply chocolate and it boasts the slight tang of cream cheese. Its texture changes completely, depending on when it's eaten: It's creamy right out of the oven and quite firm after it's been refrigerated (although the kids tend to dog it before it makes it to the fridge). I like it in its natural state, ungarnished. Ruthie likes to sprinkle fresh raspberries on it.

Ingredients:

  • One 3.5-ounce bar bittersweet chocolate
  • 8 ounces full-fat or 1/3-less fat cream cheese (Neufchatel)
  • 1 teaspoon pure vanilla extract
  • 1/4 cup plus 2 tablespoons sugar
  • 2 teaspoons unbleached all-purpose flour
  • 1 large egg

  • Directions:
    1. Preheat the oven to 350°F. Butter four 1/2-cup ramekins and place them on a rimmed baking sheet.
    2. Coarsely chop the chocolate and melt it in the top of a double boiler or in a metal bowl set over a saucepan of simmering water. Combine the chocolate with the cream cheese and vanilla in the bowl of a food processor fitted with the chopping blade. Process until well blended.
    3. Stir together the sugar and flour, add it to the processor, and blend it into the chocolate mixture. Add the egg and pulse until smooth. Divide the batter among the ramekins.
    4. Bake for 20 to 25 minutes, or until the centers are set. Transfer to a cooling rack to cool slightly before serving.

Chef Recipe: Chocolate Tart with Caramel and Cream

Chocolate Tart with Salted Caramel and Spiced Chantilly Cream

From Denny:  Everyone who enjoys a chocolate tart every time they can, raise their hands.  Yeah, I thought so - sisters of the soul.  I sure order it from the La Madeleine restaurant or other local bakery whenever it shows up in the display case.  It's like a little piece of heaven in one tiny spot - a rich little chocolate pudding, a dollop of cream and some pie crust, simply divine.

This is a New York chef recipe from the famous restaurant Aureole.  Chef Christopher Lee uses Sicilian sea salt to enhance the sweet creamy richness of the indulgent chocolate dessert.

He also includes the unlikely addition of the chocolate malt Ovaltine to the bittersweet baking chocolate.

Chocolate Tart with Salted Caramel and Spiced Chantilly Cream

Chocolate Tart with Salted Caramel and Spiced Chantilly Cream

From:  Chef Christopher Lee, executive chef at New York's Aureole Restaurant, for McCormick

    Makes:  8 servings

    Prep Time:  1 hour

    Marinate Time:  2 hours

    Freeze Time:  30 minutes

    Cook Time:  30 minutes

    Tart Crust:

    2 cups flour
    1/2 cup sugar
    1/4 teaspoon salt
3/4 cup (1 1/2 sticks) cold unsalted butter, cut into pieces
    1 egg yolk

    Salted Caramel:

    1 cup sugar
    1/4 cup water
    1/2 cup heavy cream

    Chocolate Ganache:

    1 cup heavy cream
    1/2 cup Ovaltine® Chocolate Malt
8 ounces semi-sweet or bittersweet baking chocolate, chopped

    Spiced Chantilly Cream:

    1 cup heavy cream
    2 tablespoons sugar

    1. For the Tart Crust, place flour, sugar and salt in bowl of food processor; cover. Pulse to combine. Add
butter; process until mixture resembles coarse crumbs. Add egg yolk and vanilla; process until dough
begins to form a ball. (If needed, add 1 to 2 tablespoons cold water.) Divide dough in half. Wrap each half
in plastic wrap, pressing to form a disk. Refrigerate at least 1 hour.

    2. Cut each disk into 4 equal pieces. Roll each piece on lightly floured surface into a 6-inch circle, 1/8-inch
thick. Press into 4-inch tart pan with removable bottom. Trim excess dough from top. Repeat with
remaining pieces of dough to form a total of 8 tart shells. Freeze 30 minutes.

    3. Preheat oven to 350°F. Place tart pans on large baking sheet. Bake 20 to 22 minutes or until lightly
browned. Cool tart shells in pans on wire rack. Carefully remove tart shells from pans. (Can be made 1
day ahead. Place tart shells on baking sheet. Cover with plastic wrap. Store at room temperature.)

    4. For the Salted Caramel, mix sugar and water in medium saucepan. Bring to boil on medium-high heat.
Continue boiling 5 to 6 minutes or until golden brown, swirling pan occasionally for even cooking. Remove
from heat. Add cream, 1/3 at a time, whisking until well mixed after each addition. Add sea salt; whisk until
dissolved. Divide caramel among tart shells. Let stand 20 minutes or until caramel is firm.

    5. For the Chocolate Ganache, bring cream just to boil in medium saucepan on medium heat. Remove
from heat. Add Ovaltine; whisk until dissolved. Add chocolate; stir until chocolate is dissolved and mixture
is smooth. Spoon ganache over caramel in tart shells. Refrigerate 1 hour or until ganache is firm.

    6. For the Chantilly Cream, beat cream and sugar in large bowl with electric mixer on high speed until soft
peaks form. Add cinnamon; beat until stiff peaks form.

    7. To serve, place a tart on a plate. Sprinkle with additional sea salt,
if desired. Top tart a dollop of Chantilly Cream. Sprinkle with additional cinnamon, if desired.

    Test Kitchen Tips:

Tart dough can be prepared 1 day ahead. Store dough in refrigerator. Let stand at room temperature 10 minutes before rolling into tart shells.

Chocolate tart can be prepare 1 day ahead. Refrigerate prepared tart, uncovered, until ganache is firm. Cover with plastic wrap and refrigerate until ready to serve.

This recipe was created by Christopher Lee, Executive Chef at New York’s Aureole restaurant, for the McCormick® Gourmet Collection.

Unusual 2 Tasty: Chocolate Pudding In The Raw

    RAWvolution: Gourmet Living Cuisine

Unusual 2 Tasty: Chocolate Pudding In The Raw: From Denny: There are devoted fans of the raw food diet. While not everyone can partake of this lifestyle there are many recipes anyone can enjoy. This Raw Chocolate Pudding is one of them - and so easy and quick to make!

Who doesn't love the taste pairing of chocolate and coconut? An added bonus is that in place of refined sugar the recipe uses agave nectar which is far superior on the glucose meter for diabetes and others sensitive to sugar.

The raw food diet, and this very simple and quick version of chocolate pudding, may seem unusual but it sure is tasty!
