Five Steps to Macaron Perfection - It's Easy When you Know How!

Sadly, the two are effectively night and day which is precisely why meringues are all-but given away and macarons cost a small fortune. They are some of the most fickle baked goods you'll ever come across and if you don't play by their rules to the letter, you may as well have not bothered at all.

The good news however is that there are in fact a few golden rules which, if followed strictly, can make the process much more pleasant as you're a thousand time less likely to fail. Some like to go off the rails and ignore the rule-book, but this is one sweet treat that will just up and bite you in the butt if you don't play ball precisely as you're instructed to!

1 - The Perfect Eggs

Read a recipe telling you that you don't need to age your eggs? Throw it in the trash right now - you absolutely do. Sure you don't need to time the aging process down to the second and chances are two days will suit your fine for a home batch as opposed to the five days some insist upon - in any and all cases though you need to age your egg whites at least a little. Skip this step and you'll never nail the gorgeous texture you're aiming for.

2 - Sweet Stuff

Some will tell you it's all about adding the sugar one spoon at a time and others will advise you put it in a little faster. Truth be told though, it really doesn't matter how you add the sweet stuff, it's all about when you add it. You need to get the sugar into the mx just as soon as the egg whites you're mixing become a little foamy in texture - this usually takes about 30 seconds of beating. And of course, don't every use regular sugar or icing mix in place of caster sugar - it won't work.

3 - Don't be Lazy

Cheap-out on the beating and your batter will fail...guaranteed. You need to keep on at it until the mixture starts to look pretty similar to shaving foam - a thick and glossy white mixture that's nice and stiff.

4 - Over folding

If you add your coloring to the egg mixture once it is ready to bake, be sure to fold it in very gently and don't do the folding action more than 50 times as an absolute maximum. Any more than this or any frenzied whisking action will ruin the batter outright.

5 - R&R

And finally, be prepared to allow you unbaked macarons a little R&R before popping them in the oven. One on the baking trays, it is of paramount importance that you give them as much time as they need to begin drying before you try your hand at baking them. The skin they form in the 20-40 minutes drying time is essential for their final shape and texture - don't try and rush things or you'll come out with nothing to show for your efforts.
